VINIFICATION
The vineyards are located in Manzanares near
Ciudad Real in La Mancha Spain. The Airen vines average 20 years
and sit in a sandy loam soil with typical Meditterranean climate.
The Chardonnay vines average 10 years. Harvest was late September
with the Airen grapes hand picked to a yield of 7,000 kg/ha and
the Chardonnay machine picked at 12,000 kg/ha.
The wine is fermented in temperature controlled stainless steel
tanks. Following fermentation the juice undergoes two light filtrations.

La Mancha is Spain’s largest DO and the world’s largest
wine producing area. It is ideal vineyard country due to the the
ripening cycle with long sun drenched days. La Mancha’s plains
average 2,100 feet above sea level with summer temperatures often
exceeding 110 degrees and the winter thermometer dips to 10 degrees.
