VINIFICATION
All 8100 bottles of La Bruja are sourced
from a single ten acre sustainably grown parcel in Maipu Mendoza.
The plot holds vines from 10 years of age to 60 years old. At 2100
feet above sea level this property is governed by an unpredictable
micro climate that has earned the name La Bruja, The Witch. Grapes
were hand harvested and bled and the must concentrated. A pre-fermentation
cold maceration was initiated to stabilize color. The grapes were
crushed and oak chips were added during fermenation in order to
stabilize the polyphenolic structure of the wine. The wine underwent
malolactic fermentation and tank batonnage.
